REFINED NIGHTS

Ciel Bleu’s Refined Nights celebrate the season’s finest in a masterfully curated menu. On December 13, white truffle takes the center stage, where each dish is designed to highlight its delicate character, inviting guests to savour the season’s most treasured ingredient.

BENEATH THE FOREST

White truffle grows underground, close to the roots of hardwood trees. Its aroma is earthy and intense. Chefs shave it raw over warm dishes so the heat brings out the full scent. The season runs from mid September to January, and truffles are found in regions such as Piedmont, Istria and parts of Hungary and Greece.

 

At Ciel Bleu Restaurant, this legacy continues, with Executive Chef Arjan Speelman creating a menu that honors this storied ingredient while letting it shine in every course of the evening. Experience this special evening with sweeping views over Amsterdam, on the 23rd floor of Hotel Okura Amsterdam.

A RARE DISCOVERY

White truffle is harvested with the help of trained dogs, who can locate the truffles’ strong scent underground. In Piedmont, there is even a school dedicated to training these dogs. Their work explains why truffles are rare and why each one feels like a discovery.
