at the Top of Dutch Gastronomy

Ciel Bleu Restaurant, the culinary icon on the 23rd floor of our hotel, has once again retained its two Michelin stars. The Michelin Guide has reaffirmed this coveted distinction, underscoring Ciel Bleu’s unmistakable signature — cooking with integrity, character, and finesse — and the restaurant’s exceptional, all-encompassing gastronomic experience. This recognition reinforces its position at the very pinnacle of Dutch gastronomy.

Since 2008, Ciel Bleu has been enchanting guests with a gastronomic experience of the highest caliber. Grounded in classical French cuisine, the team enriches each dish with modern techniques, international influences, and carefully selected spices. This culinary vision is paired with the warm, refined hospitality that is deeply rooted in the DNA of Hotel Okura Amsterdam. The result is a complete dining experience that transcends the boundaries of fine dining: exceptional dishes, panoramic views over Amsterdam, and an atmosphere where every detail is perfectly in place.

Executive Chef Arjan Speelman, Chef de Cuisine Mike Klaassen, and Maître Francesco Simonelli, together with their teams, continue to strive for culinary perfection.

“Retaining our two Michelin stars is a fantastic acknowledgment of our team’s dedication and craftsmanship,” says Arjan Speelman. “Earning my SVH Master Chef title makes this year even more special. We will continue to push our boundaries and aim to surprise our guests time and again with a unique and unforgettable experience.”
