Ciel Bleu’s Refined Nights celebrate the season’s finest in a masterfully curated menu. On December 13, white truffle takes the centre stage, where each dish is designed to highlight its delicate character, inviting guests to savour the season’s most treasured ingredient.

BENEATH THE FOREST

Grown underground near the roots of hardwood trees, the white truffle is one of the most prized delicacies because of its unforgettable, aromatic, earthy scent and delicate flavour. White truffles come from the northern region of Italy, Hungary, Croatia and Greece, and are carefully harvested from mid-September until the end of January. White truffles are eaten raw, and their aroma is so strong that just a few grams can flavour an entire dish.

 

The reputation of truffle goes back to the Roman Empire, where it was considered a gift from the gods by nobles and emperors. At Ciel Bleu, this legacy continues, with Executive Chef Arjan Speelman creating a menu that honors this storied ingredient while letting it shine in every course of the evening.

A RARE DISCOVERY

White truffle is harvested with the help of trained dogs, who can locate the truffles’ strong scent underground. There is a famous story in Piedmont, where a truffle dog once dug up a truffle worth over €50.000, only to eat part of it before the truffle hunter could intervene. That is why training a truffle dog takes several years, and in the town of Roddi in Piedmont’s Lange region, there is a university dedicated to their training. 


On December 13, guests at Ciel Bleu will experience the white truffle in its full glory. Each dish of the Refined Nights menu is meticulously designed to let the truffle’s delicate aroma and flavor take center stage, complemented by exceptional wines and the elegance of Ciel Bleu’s refined dining setting.
