Cookery workshops - Taste of Okura Book your workshop now!

The themes of the workshops are mostly seasonal, such as lobster, mushrooms, or asparagus, but some recurring workshops, such as our unique Wagya Masterclass, can be booked all year round. You can sign up as an individual for those cooking workshops. Reservations can be made via the reservation form, restaurants@okura.nl or telephone, +31 20 6787 450. When subscribing, please state the date and the name of the workshop in which you would like to participate in your e-mail. Just let us know if you have any dietary requirements.

Private group bookings
The cookery studio can be rented for private cooking workshops for groups of 10 or more people. Contact the Restaurant Reservations Department for more information via restaurants@okura.nl.

What to expect?

During the workshops, you will put the theory into practice by preparing three delicious dishes inspired by Okura’s kitchens. As a group, you will enjoy your creations at the Taste of Okura's dining tables. Please, note that the workshops will be given in Dutch. If non-Dutch speaking guests are attending, then part of the explanation will be given in English. All workshops take approximately 4 hours.

Including:

  • Welcome tea or coffee with petit fours on arrival for daytime workshops
  • A sparkling aperitif on arrival for evening workshops 
  • Water, juice, and alcohol-free cocktails during the entire workshop
  • A glass of wine with each course
  • Coffee or tea with petit fours to conclude the workshop
  • Hard copy of the recipes

Okura’s Grand Dessert Easter Edition

At Hotel Okura Amsterdam, we prepare hundreds of delicious desserts daily; in the cookery studio, restaurants, and, of course, our own Pastry department.

In this afternoon workshop we take you through some of our most popular desserts; some classic, some modern, all seasonal, and even festive! We will prepare a total of 5 desserts to create your own ‘Grand Dessert’. After this workshop you will amaze your friends and family with a grand dessert during Easter. 

During the afternoon we will serve a light lunch and we conclude the workshop by enjoying your own creations with of course tea or coffee.

Fish & Shellfish - Masterclass

In this workshop, we will introduce a range of flat and round fish and shellfish, covering the following topics:

  • Seasonal and sustainable fishing
  • Recognising freshness and quality
  • Opening, descaling, deboning and filleting

Meat Masterclass (featuring Japanese Wagyu)

One for the true meat-lover!

No surprise - we will focus on meat throughout all 3 courses of this workshop, taking inspiration from all of Okura’s Michelin-starred restaurants.

Learn about the cuts of meat, what to look for when choosing meat and which preparations suit which cut. Of course, accompanying ingredients, sauces especially, can make or break your meat dishes, so these will be strongly featured.

The highlight of the show is, of course, the delicious Japanese Wagyu beef which is very popular with our guests and comes complete with its own unique history and preparation instructions.

No dessert in this workshop – it’s all about the meat!
However, as always, we will conclude the workshop/dinner with tea/coffee and handmade friandises from Okura’s pastry chefs.

3-course Dinner Workshop

Each month we create a new menu with the best ingredients the season has to offer. The menu is inspired by Okura’s three Michelin-starred restaurants, using the same top quality ingredients.

You have the choice of 3 versions of the workshop - choose the workshop that appeals to you most!

  • 2 courses featuring meat
  • 2 courses featuring fish and shellfish
  • both meat and (shell)fish

The third course is always a delicious seasonal dessert and of course we finish with tea/coffee and hand-made friandises from Okura’s pastry chefs.

Lobster - Masterclass

The Dutch Oosterschelde (freshwater) lobster season runs from the end of March until 15th July. In this workshop, we will cover the Canadian, European and Oosterschelde lobster.

Asparagus - Masterclass

This most regal of ingredients, known in Holland as ‘white gold’, returns each April to our kitchens, bringing inspiration for a new season.We begin this workshop with a presentation about asparagus and a demonstration of the dishes on the menu.

Game Masterclass

Game season signals the real transition into autumn and brings deep, earthy flavours of meat and poultry. Time for a workshop dedicated to game, from preparation and cooking to pairing with the right ingredients and sauces.

Mushroom Masterclass

'The quiet hunt' is what the Italians call the seasonal search for wild mushrooms. Nature gives us these special ingredients to combine with other flavours of autumn such as game, root vegetables, and earthy comfort food for the colder days. Learn about the different farmed and wild mushrooms and prepare some unexpected and delicious dishes.
