Press release: Ciel Bleu intensifies cooperation with sister restaurant Elements in Bangkok

Amsterdam – 4 September 2018 – Two-star restaurant Ciel Bleu in Hotel Okura Amsterdam and its sister restaurant Elements in The Okura Prestige Bangkok, which has one Michelin star, are intensifying their cooperation. As part of this cooperation, chefs team Onno Kokmeijer and Arjan Speelman will take on an advisory role and a new Chef de Cuisine will take the helm at Elements – Inspired by Ciel Bleu: Keng Vichianrat.

In the first Bangkok edition of the culinary guidebook in 2017, Michelin awarded Elements one Michelin star. Onno Kokmeijer, Executive Chef and Manager of Ciel Bleu Restaurant says: “The Michelin star is a clear recognition of quality, and something you have to earn again every single year. To do that, you have to constantly innovate and improve. In other words, to make sure you retain one Michelin star, you have to strive for two.” Chefs Onno and Arjan are celebrating 10 years of two Michelin stars for Ciel Bleu. This makes them the obvious people within the Okura chain to take on an advisory role. Kokmeijer: “We will both remain in Amsterdam, so it is vital that we have someone at Elements whom we can trust blindly. We found that person in Keng Vichianrat.”

Keng Vichianrat has worked at the prestigious La Rive Restaurant in the Amstel Hotel in Amsterdam for 10 years, ultimately as Chef de Cuisine. He has gained extensive experience at La Rive and participated in numerous national and international culinary contests. Vichianrat will act as Chef de Cuisine at Elements as of October. “I was pleasantly surprised when Onno Kokmeijer asked me. It is a huge honour to be asked by this two-star chef.” The top chef has a strong connection with Thailand. “I grew up near Bangkok, so I speak the language and know the culture. Coming back to Thailand feels like coming home to me.” Vichianrat takes a forward-looking view of his new position at the restaurant: “The cuisine at Elements will remain the same: French with Japanese ingredients. It is certainly my ambition to make a culinary mark on Bangkok with Elements.” Although Onno and Arjan will remain at their home base in Amsterdam, various members of the Ciel Bleu team will regularly travel to Bangkok to exchange expertise and experience.

Ciel Bleu Restaurant, located on the 23rd floor of Hotel Okura Amsterdam, was awarded its second Michelin star in 2007, under the leadership of chefs team Onno Kokmeijer and Arjan Speelman. The restaurant is affiliated with the Alliance Gastronomique and boasts no less than three SVH Masters: Master Host Pasquinel Kolk, Master Sommelier Noël Vanwittenbergh and Master Chef Onno Kokmeijer.
