The month of November highlighted our culinary experience in an international environment. Among these, Restaurant Ciel Bleu has been elevated its rating in La Liste 2024.  Furthermore, Chef Arjan Speelman and Chef Masanori also had the honour to showcase their talents during the Okura Prestige Bangkok’s Japanese fair. 

La Liste 2024

The rankings of the La Liste 2024 have been revealed. We are thrilled to announce that Ciel Bleu elevated its rating from 95 to 95.5 and has maintained its position as one of the top three restaurants in the Netherlands. We want to thank our Chef Arjan Speelman and Maître Francesco Simonelli, our dedicated team, our wonderful guests, and all contributors to this success.

Chef Arjan Speelman has been leading the kitchen at Ciel Bleu since 2022. His journey at restaurant Ciel Bleu in Hotel Okura Amsterdam began over twenty years ago. In 2003, he was asked to co-lead the Ciel Bleu kitchen team, bringing the restaurant to double Michelin-star status by utilizing the strengths and talents of each team member and leading a dedicated and engaged group of individuals. At Ciel Bleu, Chef Arjan Speelman and his team aim to create a world-class dining experience and achieve the ultimate taste by infusing passion, expertise, and finesse. The artisanal and traditional cuisine are blended with inspirations from all corners of the world.

Okura Prestige Bangkok’s Japanese Fair

During the Okura Prestige Bangkok’s Japanese Fair Chef Arjan Speelman collaborated with Michelin one-star Chef Gerard Villaret Horcajo in Bangkok. Together they crafted an exclusive ‘4 Hands Michelin Dinner’ at Okura Prestige Bangkok’s Japanese Fair, Sense of Japan.

The Michelin-starred restaurant Elements, inspired by Ciel Bleu serves French cuisine with Japanese influences in a relaxed, informal setting with menus that reflect a remarkable blend of textures, temperatures, flavours and colours. With stunning views of downtown Bangkok.

Yamazato Bangkok

Chef Masanori Tomikawa and Residence Chef Haruaki Matsuoka joined forces at Yamazato Bangkok for a delightful 4-Hand Kaiseki Omakase, showcasing the essence of this renowned culinary art form.

Yamazato Bangkok is based upon the centuries-old traditional Kaiseki Ryori (Japanese haute cuisine). Designated a Michelin Guide’s selection restaurant in the inaugural Bangkok edition of the famed French dining guidebook, Yamazato also features two teppanyaki tables, a sushi bar stocked with the freshest seafood from Toyosu fish market, and private dining rooms. Yamazato celebrates many Japanese festivals throughout the year, offering special lunch and dinner menus, in addition to the extensive à la carte choices.
