The culinary journey of Onno Kokmeijer and Arjan Speelman in Ciel Bleu Restaurant started ten years ago. When Onno was asked to lead the restaurant he immediately knew that he wanted to have Arjan as his right-hand man. Their friendship dates back to their college years, when they worked together during various traineeships. The mutual respect grew and they realised they could learn a lot from each other. This way, a bond of trust has grown.

A strong team

Onno and Arjan proved to be a great team. Although they are opposites, they complement each other perfectly. Chef the Cuisine Arjan is creative and concentrates on combining flavours. The approach of Executive Chef & Manager Onno is more practical: he makes sure that any dish can be prepared every night, even when the restaurant is fully booked. Arjan provides the general picture, while Onno refines the recipes and focuses on the visual aspects – the arrangement on the plate, the type of tableware and the way of serving. This difference between Onno and Arjan's way of thinking results in the most creative recipes.

Changes

The chefs came a long way since their appointment in 2003. Onno Kokmeijer: "Ten years ago when Arjan and I came to the Okura, the restaurant looked different than it does nowadays. Our ambition was to bring innovation to the culinary concept of the former classic French restaurant.

The first step to achieve this was enlarging the menus and also the interior could use a makeover." And so it happened. In the summer of 2007, right before Michelin awarded the restaurant with its second star, the interior of Ciel Bleu Restaurant was completely renovated. A Chef's Table was created, making a long-time dream of Onno Kokmeijer come true: "Guests can now literally watch the ambitious kitchen team in action, a great chance for us to have personal interaction with our guests."

Culinary concept

Not only the restaurant got a complete makeover; the culinary concept also got a new boost. The chefs let go of the classic French cuisine and introduced a more innovative way of cooking. Because many international guests find their way up to Ciel Bleu, it is important to keep track of culinary developments outside The Netherlands as well. Therefore, Onno and Arjan sample many different cuisines and get inspiration from travelling to other countries, including England, Spain, France, Italy, Japan, China and the United States. They spend a lot of time together in the kitchen and try to continuously innovate to overwhelm their guests. It's not just the food that has to be surprising; it's about the total experience. Pasquinel Kolk and Noël Vanwittenbergh are responsible for the restaurant. With lots of enthusiasm and flair, they know how to catch the attention of the guests with sharing knowledge for their profession. Surprising, innovating and an eye for perfection have been the basis of Ciel Bleu in the past and will be in the future.

In 1971 a remarkable tower arose in the South of Amsterdam. How did this 23-storey building end up in the middle of a residential area? Let us take you on a trip down memory lane... To the delight of the Dutch government, contracts of a major construction project were signed in 1969. The prestigious Japanese hotel chain Okura choose Amsterdam as the first location abroad of their international expansion. Close to the old RAI conference building, a site was available where an opera building and metro station would be realized; a very promising outlook. A hotel with international allure would complete this new cultural site in Amsterdam. Four architects were chosen, two Japanese and two Dutch to get the best of both cultures.

A beautiful complex

Plans were drawn up for a beautiful complex consisting of two separate buildings. A tunnel in between would connect the opera and hotel with each other. Because of the technical and acoustic requirements of the opera, the opera building had to be very colossal and many valuable adjustments were made to the blueprints. An underground parking garage had to be realized and the hotel building was forced to go up in the sky. Because Hotel Okura Amsterdam had to be a tower, a remarkable landmark arose in the Amsterdam skyline.

What happened?

Nowadays, the location looks totally different than planned back in 1969. It soon turned out that there was a difference in the financing of both buildings. The budget of the opera became a much debated subject in the following years. Therefore the opera could not directly be materialized. The construction of the Okura on the other hand, started immediately. In the end, the opera was never build, the development plan of the once 'cultural area to be' changed. Instead the hotel was surrounded by a retirement home, a petting zoo, a youth center and a sport center, none of them higher than the adjacent buildings. This way the tower of Okura is an unexpected contrast in the neighborhood. A great side effect is the breathtaking panorama over the city. From Ciel Bleu Restaurant, the Twenty Third Bar and THE SUITE as well as most rooms, spectacular sights of Amsterdam can be admired without any other tall buildings obstructing the beautiful view.

If you're not familiar with the profession of the hotel concierge, here is the definition that best describes it: a concierge is someone who can arrange almost everything to make your stay as pleasant as possible.On a daily basis, the concierges provide guests with touristic information, advise about restaurants and make reservations, organize transfers by limousine, shuttle bus our boat and they assist with tickets for public transport, museums, concerts, you name it. In addition to these daily tasks, they also face unexpected challenges.

Unexpected challenges

Martijn Ottenhoff, Head Concierge at Hotel Okura Amsterdam explains: "Not a single day is ever the same. When I start my shift, it might look like a quiet day at first sight. But than the phone rings and all of a sudden a challenging quest can appear. Guests have all kinds of questions; the most memorable question would be from a guest who asked assistance in buying a cow! Direct contact with guests and being able to assist with all kinds of challenges makes my job very rewarding. In addition, a nice side effect is that we get invited to all kinds of touristic companies that like to us to get acquainted with their product. All in all, I think I have the best job in the world!"
