Amsterdam, November 21, 2008 – Hotel Okura Amsterdam’s Teppanyaki Restaurant Sazanka presents its own reference work: Sazanka – Refined Teppanyaki Cuisine, by Chef Masashi Nonaka. In it, twenty Japanese grilled dishes are clearly explained and illustrated step by step. The history of Teppanyaki cooking is also discussed extensively, as well as the latest trends, products and materials. Stichting Kunstboek is the publisher of this culinary book. Sazanka – Refined Teppanyaki Cuisine is available at selected bookshops and Hotel Okura Amsterdam for €34.50.
In the book, Mr Nonaka and his team demonstrate that their exquisite cooking is a far cry from the ‘show-and-throw’ spectacle often associated with teppanyaki cuisine. Fish, meat and vegetarian dishes, side dishes and desserts are presented with the special Sazanka touch, that is to say teppanyaki of gastronomic allure, in which the quality of the ingredients is of central importance. The book’s text was written by Rodney Bolt, Masashi Nonaka and Kasia Cwiertka. Stephane Verheye and Olivier Chenoix provided the photographs. Every recipe includes a wine suggestion by the Okura’s sommelier, Noël Vanwittenbergh. The book is available in Dutch (ISBN 978-90-5856-297-5) as well as English (ISBN 978-90-5856-298-2).
Chef Nonaka draws his inspiration from the time spent together with guests at his teppanyaki hot plate. Mr Nonaka considers interacting with guests the most important aspect of teppanyaki cooking, which allows him to cater to their individual tastes. “It is an honour to be able to increase people’s knowledge of Japanese teppanyaki cuisine through this publication.” Previous Hotel Okura Amsterdam publications are: Yamazato – Kaiseki Cuisine (2003), Yamazato – Kaiseki Recipes (2006) and Ciel Bleu – Idiosyncratic French Cuisine (2007).
About Teppanyaki Restaurant Sazanka
On the ground floor of Hotel Okura Amsterdam you will find Teppanyaki Restaurant Sazanka. Teppanyaki literally means ‘to grill on a hot plate’, which is traditionally the oldest way of preparing food in Japan. In Japan this kind of dining is very popular, in part because the chef prepares food right before guests’ eyes. Sazanka’s interior is in a contemporary Japanese style, the design of which is based on stone, wood, water and fire. These elements reflect the prominent role nature plays in Japanese daily life. Our eleven teppanyaki hot plates will seat seven to ten people each and are suitable for both business and festive gatherings. Is it also possible to reserve the private room.
